I also came across a wonderful restaurant somewhere in the country where a real Frenchman offers authentic French onion soup. I don't know what kind of onion the Frenchman prepares it with, I will go and try it. It is certainly delicious. But do Bulgarians also prepare onion soup? If it is not fashionable now, then maybe before. Yes, I found it in the book "Bulgarian Folk Feasts" by author Anna Dr. Hakanova, written in 1939, republished by Marin Lesev in 2019. It was a favorite peasant soup, but considering that 80% of the Bulgarian population at that time lived in the villages, it was a favorite of a large part of the Bulgarian people. And of course it is called soup, not soup. And now is the time, with all the flu blizzards in our time. It is a perfect substitute for immunostimulants from the pharmacy. Because the soup is feelings.

Recipe

Peel 5-6 onions, cut them into slices and put them in a saucepan until they are soft. Then strain them through a sieve. You get about 2 cups of thick, delicious soup. Add grated celery (one head) to it and let it soften together with 2 tablespoons of oil and a little more water. Add the necessary thickness for chalba. Season with egg yolk and lemon juice. This soup is eaten warm in winter, it is very tasty and healthy. In summer, it is served cold. Some people prefer to cut the onion into small slices and not strain it, but to feel it. In general, Bulgarians love onions very much, having rightly appreciated its nutritional value and healing properties.

In the more sophisticated restaurants in our country, French onion soup is offered.
